Hmmm...bamboo jersey is stretchy and thin, but so is cotton jersey, and soy jersey. If it's jersey or interlock (think, tee shirt material), I'd use 6-8 layers for a soaker. Test it out on your serger, though, to make sure it doesn't choke on the layers.
Also, I'll warn you now -- it can be really challenging to keep all the layers together going through the serger. You may want to practice on 3 layers, then try 4, and work your way up to see how you go.

The precut soakers are probably bamboo fleece. If so, I'd use three layers.
It looks like most of the uncut fabric is probably bamboo, too. For the uncut stuff, I'd prep it before cutting. For the precut stuff, I'd sew it before prepping (or it'll come out wonky and hard to sew).
YES!!! It was actually Craigslist (not sure why I said freecycle...) She posted that she had some free diaper cutouts so I promptly emailed her and when I called the day I was picking them up she said "well i have some extra fabric too if you want it". Of course, I said sure. And I was VERY surprised at what I got!!!

I am going to be doing some major sewing.
Well, I'm 90% sure that a lot of this fabric is bamboo. But I'm not 100%. Is bamboo really stretchy and thin?? Cause this is.
Also, making soakers and/or diaper inserts, how many layers of bamboo would you suggest? What about hemp???
