I'm making penne with vodka sauce tonight. The recipe calls for 3 tablespoons of vodka. How long do I have to let it simmer in order for the alcohol to cook off?
Also---with that small amount of vodka, it's safe, right?
You're safe....it doesn't take too long on heat to burn the alcohol off. Although I will totally admit in my first tri I went to a restaurant and couldn't bear to eat my macaroni and cheese that had beer in the sauce =S
If you're making a full batch, with only 3 tbsp there would literally only be a couple drops in each serving...so even if the alcohol didn't fully evaporate the amount you'd actually be ingesting is so minuscule I wouldn't worry.

I made this last week! Yummy! My recipe called for a 1/3 of a cup (I wouldn't let DH go buy a new bottle of vodka because I didn't want to stare at it for 4 more months, I already have enough alcohol staring me in the face, so we scoured for a few airplane bottles we had around) and I let it simmer a few minutes...maybe 5? It didn't take long and I could tell it was all cooked off. Mmm, I can't wait to make it again.
that sounds like a lot of work. you know....you can buy vodka sauce in a jar. at the grocery store. comes already made. ;o)
Picky hubby We're italian and don't eat much jarred sauce in this house. If I use it, I have to sneak it in. It takes less than an hour to make, start to finish.

oh i'm just jealous. can i come over for dinner? cooking during pregnancy isn't working so well for me. by the time i get home and relax for a few minutes, i only have about 20 mins til i MUST eat. no time for cooking homemade things.

Give a girl a break. I really wanted to know how long till the alcohol cooked off. I wasnt sure if it was 5 minutes or 50 minutes.
