I usually serve on a french loaf with some provolone cheese. If I am really feeling crazy, I'll saute some onions to put on the sandwiches. Super easy but good.

I slice a yellow/white onion and put it and a roast in the crock pot.
Mix a can of beef broth, a packet of "au jus" mix - like mccormicks, and a packet of lipton onion soup/dip mix plus a few cups of water and pour it over the meat and onions.
Cook on high for 4-6 hours.
Slice it, put in on toasted hoagie buns with the cooked onions, melt provolone on top in the broiler and serve them with a side of the juice from the crock pot for dipping. YUM. One of our favorites!

This is the same way I do it except with Mozzerella cheese. I take it from the crock pot when done, shred it, lay it out on a loaf of french bread, top with shredded mozz, and then toast in the oven for a little bit. Then serve with the broth. So yummy! And it even reheats pretty well the next day if you have some left.
And I use beef broth not consume and eye round roast not brisket (unless that is another name for brisket and I don't know it..lol) . But same idea! I got it from the first weeks E-mealz menu.
