I think about 2-3 months. But if you consider you really only introduce 1-2 new foods a week, there are still a lot you can introduce during barren season, then wait till spring to do more variety.
ugh, so making ahead and freezing isn't an option.
Do you have a pressure canner? You can't do purees safely, but you can do steamed/blanched stuff in cubes and it will have a much longer shelf life. That's what I plan on doing. LO is due the last week of June but I'll probably steam/cube things like squash and sweet potato for her then it'll be easy to puree it when she's ready to start solids.
