I'm at the point of pregnancy where I want to cook and freeze stuff but am too exhausted to do much in the evenings so we are doing a lot of easy stuff. Right now we have a Boston butt in the oven for pulled pork and chicken stock working for chicken and dumplings. We also plan on making Cincinnati chili for three ways, and attempting at home Buffalitos ala BW3. We are going out Friday to Riverside in Covington--yum!

Good question -- I need to get on it! Here are a few things I have in mind:
Today: Beef Vegetable Soup
Rest of the week:
Meatloaf, green beans, baked mac&cheese
Shredded buffalo chicken sandwiches
Lasagna, breadsticks, and salad
Tonight: eating at my mom's (beef short ribs and noodles..YUM!)
Mon: beef and veggie stew in crockpot (from Fix It and Forget It), beer bread, salad
Tues: pasta fagioli, more beer bread and salad
Wed: my alma mater (McNick) and DH's alma mater (Bethel Tate) are playing each other in the basketball tourney and we're going to watch!! So we'll eat on the run!
Thurs: my poor excuse for chicken fried rice with fruit or applesauce
Fri: either fish fry or cheese or veggie pizza

Tonight: dh is on his own. I had a late & huge lunch at Max & Erma's.
Monday: something fish + potatoes & veggies
Tuesday: turkey sausage, baked potatoes, veggies
Rest of week- in some order:
Parmesan Herb crusted chicken, roasted potatoes and some sort of veggie
spaghetti & garlic toast
crab cakes over rice + a vegetable
Chicken & rice casserole
Friday: We're going to a wedding, so it's whatever's on that menu...
Sunday - steak fajitas
Monday - turkey BLT
Tuesday - chili
Wednesday - I have to work late so Leo and DH are on their own
Thursday - Brinner
Friday - tomato soup and grilled cheese
* DH is on spring break so he will actually be home for dinner this week, I'm so excited!
I am HORRIBLE at this and I admit we eat cereal for dinner a few nights a week. I am trying to get better....it's a process. This week I know I will make
Tacos, then probably fajitas (frozen mix) to use up the rest of the torillas.
Grilled cheese and soup
and some kind of sandwhiches maybe bar b q, maybe something else, IDK, I have buns. I will find something to put on them
