Has anyone made PW's yogurt chicken with boneless skinless chicken instead of the bone-in? I've made it (but only with bone-in) and it was really good, but I'm not sure how it would do with the boneless/skinless. We're having people over for dinner tonight and I need something yummy and also kid-friendly, as there will be 3 kids eating
And I don't have cornflakes! Everything on allrecipes is calling for crushed up cornflakes. I do have italian breadcrumbs and Panko breadcrumbs and lots of spices. No buttermilk, but I do have plain yogurt. Help!
Re: Easy baked/breaded chicken recipe?
Dredge the chicken in egg white with a splash of milk, yogurt or ranch dressing. Then dip in Italian bread crumbs (I sometimes mix in some parmesan) then bake for 30-35 minutes at 350 degrees. I make this ALL the time it's super easy and kid friendly
*If you want you can also double coat the chicken
I have done an "oven fried chicken" before using bread crumbs and panko. It's really good and I have only ever used chicken breasts.
(the recipe I've used calls for mayo (I use light mayo) instead of yogurt, but I imagine it does the same thing)
Lightly brush chicken breast with mayo (this keeps the chicken breasts SO moist and yummy)
In a zip lock bag...toss chicken breasts with bread crumbs or panko and mix with some herbs/spices and toss until fully coated.
Place in a baking dish. I usually drizzle a tiny bit of butter on top just to crispen it up and to provide a little more flavor. Bake for 30 or so minutes (obv. until chicken is done:O))
Enjoy! It's very good and super easy. Alot of times i'll make a hot sauce for the side for dipping, but i've also used it has a coating before to offer up a different flavor. Either way is delish:)
I love this recipe. Do you have parm cheese?
ETA: I see you don't have buttermilk. Drat. Well, save it anyway, because my DS loves these and so do we!
