DH's grandmother's name is Virginia. I am not a fan of that name but if we were to honor her I was thinking of using a V name or is there some other version/nn of this?
Using some random V name is not the same as using Virginia.

I have a cousin named after my grandmother named Virginia Rose--her nn is Ginny Rose. I think it's really cute. My middle name's Virginia, maybe that's an idea?
I'm also not a fan of Virginia, but you could call her Ginny! Which I love Or you could still honor your DH's grandmother by just naming her Ginny (and skip Virginia altogether).
Other V names: Veronica, Victoria, Violet, Viola (my friend's grandmother was Viola but went by Vi).

The entire Jewish relgion names their children based on this concept. You take the first letter only. That way there aren't 10 Virginia's in the family and a name that becomes really unpopular like Bertha or Ernie don't get carried on. So yes, you can honor a loved one by just taking their first initial.

obviously it's not the same but it's actually fairly common to honor a family member by using the first initial, especially in judaism where you are not supposed to name a child after a living relative.
