This is very unusual for me to know what we're having for dinner most of the week! Our (DH & mine) dinners are usually a little different since I don't eat meat, but I try to make things I can easily throw chicken onto for him. Sometimes, I still end up making 2 full meals.
Whole wheat pasta with broccoli and a sun-dried tomato fettucini sauce, add chicken for DH
Burritos - Beans for me, chicken for DH
Organic four cheese tortellini (from Costco - YUM!) with a bruschetta sauce (from Trader Joe's), served with a salad
For DH - Mozzarella chicken with a white wine sauce, served with some sort of vegetables/Veggie burger or something frozen for me
