I like to make boneless skinless chicken breast and I always just bake it with some chicken boullion and paprika sprinkled on top and a little water in the bottom of a glass dish.
I need some new ideas! What is your go to chicken recipe?
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1-1/4 cups YOUR FAVORITE SALSA ? WE USE A SWEET CORN SALSA
1 cup frozen corn, thawed
1 large green pepper, cut into short thin strips - OPTIONAL
1 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
Make It!
COOK pasta as directed on package.
MEANWHILE, heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cook and stir 2 min. Stir in salsa, corn and peppers. Bring to boil. Simmer on medium-low heat 10 min. or until chicken is done, stirring occasionally.
DRAIN pasta. Add to chicken mixture; mix lightly. Top with cheese. Remove from heat; cover. Let stand 1 min. or until cheese is melted.
Pour some sauce in glass pan, place chicken breasts on top, top with sauce and a little bit of bread crumbs, and bake covered with foil for about 40 mins on 350. Add some moz cheese and bake uncovered for another 15-20 minutes. Make some pasta...yummy
Salsa chicken - put 2-3 breasts in crockpot, pour jar of salsa over, and can of black beans and cook on low all day - shred chicken and serve with tortillas, chips or rice.
Chicken Parm - 3-4 chicken breasts in baking dish, top with jar of spaghetti sauce and mozz cheese and bake at 375 for about 45 minutes to an hour depending on how thick they are and serve with pasta.
Saute with olive oil until mostly done, then poke and sprinkle with lemon juice, and smother in a mix of salt, pepper and cumin. cover and let finish cooking for 5 or so minutes.
Serve with couscous, hummus and red pepper strips.
I am a dummy in the kitchen, so pardon the lack of proper terminology-LOL!
I love mediterranean and if DH cared for olives, I would use black olives.

I saute onions until brown, add cumin, black pepper, garlic and ginger, and tomato paste, and let the spices simmer for a bit and then add the chicken (cubed into bite sized pieces). I cook on high heat mixing frequently until it's done. Tastes great with white rice on the side.
Last week I made some easy chicken w/ a (modified) recipe from the side of a bottle of stir fry sauce. It was for beef, but I used boneless chicken breast cut into strips.
Just mix 1 tablespoon cornstarch and 1 tablespoon soy sauce (I added some grated garlic and ginger b/c I don't like the taste of meat w/o it!). I coated the chicken strips in it.
I "fried" it a skillet ( I only used about 1tblspn of oil) with seasame seeds.

i like stuffing them with some sort of cheese, like goat cheese or feta, and then wrapping them in bacon.
i think my go-to recipes always involve being wrapped in bacon...
Baked with salt and pepper and then covered in cream of mushroom soup.

1 bottle catalina or french dressing
1pkt onion soup mix
mix and pour over chk...bake till done
