Birthday Expressions has really really cute party decor for this theme. I just got the catalog in the mail last week. It's from the same company that sells the first wishes birthday stuff.
We are doing the same theme. Here are my ideas so far. Table centerpieces will be bright flowers (think sunflowers and gerber daisies) in mason jars with red gingham ribbon around them. I'm making the table clothes out of a cow fabric with maybe some red gingham thrown in. Food will be "country" -- fried chicken, pulled pork, baked beans, coleslaw, cornbread. I'm going to serve the food in baskets and galvanized pails. I'm using a big galvanized tub (kind of looks like a trough) for the drinks. Plastic silverware will be wrapped in red napkins and tied with raffia. I'm getting a few bails of hay to put around the space and my co-worker is lending us an old wagon wheel. I'm not sure yet how I'm going to incorporate the animals yet except we're doing animal cupcakes and a pig pinata. I'd like to do animal balloons if I can find ones that aren't totally tacky. My co-worker also offered to lend us a real pony for rides. I would SO love that but we're having the party at a community center and I don't think they'd be too thrilled if I brought live animals in! Hmmm... I think that's all I've got so far! Oh, and there are some adorable barn invites on etsy.

We didn't really do a party, but I decorated with farm animals for DD's second birthday b/c she likes them.
I got toy farm animals and a barn out of the dollar bins at Target to decorate her cake.
I also put together balloon farm animals from a kit. She looooved them, and they would've made really cute centerpieces.
