Poutine lovers, come in

Wee got me thinking about poutine now. It is not something that is readily available in my neck of the woods, so if anyone makes it at home, tell me how you make your gravy.

I use fresh cut fries and fresh cheese curds, but can't quite get the gravy right.

  • What kind of fries do you use?  I have never tried to make it but now I want some!
  • This sounds good except for the cheese curds part.  Wikipedia says they're rubbery, and I don't like rubbery food.

    They can be. But the fresher they are, the less rubbery they are.

    And....now I am dying for poutine.

    But they get all melty and gooey.  They are only rubbery if you eat them cold.  And they squeak.
