Many kids actually do have a harder time managing stage 3 foods versus real/soft finger foods, due to the mixed consistency of purees and lumps often found in stage 3 foods. I'd recommend focusing on single textured foods, starting with meltable solid foods and then soft cubes and go from there.
Oh, and regarding when to start, 8-9 months is common. I'd start with 1/2 a puff or comparable meltable solid, placed on the inside cheek and see how DC does.

We do puffs now and he loves them and does great with them, I'm just not sure what to move on to next...

We never did stage 3, at that point they should be able to eat finger foods.
DD is eating puffs and some really small pieces of food, but isn't on full on finger foods yet.
You could try small, soft food and see if your DC likes it.
