DD loves beans, she especially loved the beans from a black bean soup I recently made, and always loves the beans from my white turkey/chicken chili. I just pick out the beans and give them to her (she doesnt touch chicken or turkey...or ground beef for that matter!).
If you want the recipes I can post those for you tomorrow, I'm headed to bed. I'll re-check this post in the AM
add peas and spinach to water before it boils, once it boils add couscous. Cook the 5 mins or whatever it says on the box once it's done add tomato and feta. DD and I both eat this all the time. It's cheap, super fast, and healthy:)
dd is going through this stage too =( i crockpotted some chicken breasts today, shredded the heck out of them and mixed them in with her applesauce. she ate the whole bowl. score one for mommy. good luck, you have to get crazy and creative.
have you tried deli meats? our pedi suggested trying it because it is such a different consistancy. she also told me to try feeding different things at times i wouldn't normally serve them. like this morning i gave her some deli turkey with her breakfast, and she ate half of it. not too bad!
black bean burgers, cous cous, chili (add celery or eggplant or some other veggie), stir fry, broccoli nuggets (I use citygirl's recipe *i think*...) hmmm baked or sweet potatoes, stuffed squash
I eat quite a bit of vegetarian food. do a search on allrecipes!
we usually add chicken to this soup in the crock pot, but it's two cans sweet corn, one can red kidney beans, two cans great white northern beans, two packets of taco seasoning, 4 cups chicken broth (could easily use veggie broth). it's really yummy, even before adding the chicken.

I haven't tried the black bean burgers--we tried the veggie ones and he hated it. The cheese would probably help, though!

Veggie Couscous:
1 box of parmesan flavored couscous
handful of frozen chopped spianch
handful of frozen peas
handful of fresh chopped tomato
