I'm making my menus for the week and I need some inspiration! I prefer fairly cheap and easy:-)

  • DH is supposed to do the cooking - I got a phone call asking if he coudl order LaRosa's or if I wanted him to get something out and cook it. This was at 4:30. So, we are having LaRosas since we would likely ended up having chicken rings since everything was still in the freezer! LOL

  • Had my menu all planned, but forgot to lay anything out! So were having Blackened Fish sandwhich & Mac&Cheese
  • Tonight is crispy chicken, mashed potatoes, green beans and applesauce

    Tomorrow is Melissa's beef tip recipe with noodles

    Wednesday is sloppy joes

    Thursday is cheesy chicken biscuit cups 

    Friday is chicken tortilla soup in the crock pot

  • Tonite I just had peanut butter and crackers. I made grilled ham and cheese sandwiches for DH and Jack. I have needed to go to the store, but we have had lots of company and no time!

    I'm planning some homemade chicken noodle soup, Jambalaya and stir fry...

    Also, can I have the recipe for Santa Fe Chicken?

    Hey, Melissa!  I make it in the crockpot.

    1 (15 ounce) can black beans, rinsed and drained (I use 2 cans cause beans are my thing!)
    2 (16 ounce) cans whole kernel corn, drained
    1 jar bottled thick and chunky salsa
    5 or 6 skinless boneless chicken breasts (I use 1.5-2 pounds chicken)
    8 ounces cream cheese (I use fat free)


    In crockpot, mix together the beans, corn and 1/2 of the salsa. Top with the chicken breasts, then pour the remaining salsa over the chicken. Cover and cook on HIGH for 2 1/2 to 3 hours, or until the chicken is tender and white throughout; do not overcook or the chicken will toughen.

    Remove the chicken and cut into bite-size pieces or shred it. Return chicken pieces to the crock pot. Add the cream cheese (cut into cubes to melt faster), and turn crock pot to HIGH. Heat until cream cheese melts and blends into sauce. Serve over rice.

  • We had vegetable beef soup and calzones over the weekend. Tonight we had patty melts and potato wedges.

    brussels sprouts pasta with bacon

    oven fried chicken, sweet potatoes, buttermilk biscuits from scratch

    turkey tacos and refried beans

    Hey there! Would mind sharing your biscuit recipe.  I can make a lot of things but I stink at biscuits! Haven't found a recipe that doesn't hate yet but am always looking for a new one to try :)

  • I usually try to do one really exciting meal or new recipe each week but this week it is just the usual stuff....

    Tacos (turkey) & black beans

    Spaghetti & turkey meatballs

    Low-carb chicken chili

    I don't even remember what else.  We're eating out on Friday night though.

  • It is 10:43 and no dinner here tonight, compliments of DS and his wreck and the aftermath attitude.  I have a nice glass of white wine.  I envy everyone who had a nice dinner.

  • Sunday night we had chicken crescents, baked potatoes and green beans.

    Last night both of us were fighting colds so we ate soups/light salads.

    Tonight we're having chicken parm in the crock pot with penne on the side.
