Hi!

We are going to name our son James and the middle name will (probably) be Forrest. I know the traditional spelling is with 2 r's, but I kind of like it with 1. Its like a real forest! Is that too weird??

I prefer it spelled with two r's.

I actually prefer it spelled Forest. I would just choose the spelling you like best, especially because it's a middle name and either one is fine.
