I cooked up a bag of whole wheat spaghetti.... Then, I cut up a zuchini, a bunch of asparagus and some sliced mushrooms, and drizzled a bit of olive oil and a bit of salt on them. I roasted them for about 40 minutes at 400.
When they were done, I dumped the veggies in with the pasta, added some minced garlic and another little drizzle of olive oil...
Once I added it to my plate I sprinkled some parmesean cheese on it.
So freaking good and super quick!

I make something similar, only I add a can of diced tomatoes with oninon and garlic to the zuchini before i roast it.
OOOH, that is a great idea! I will do that next time.
