hi
i just got my first cast iron skillet for the holidays and am scared that i am going to mess it up. the directions say to wash with a stiff bursh and hot water and do not use any harsh detergents - is dish soap ok to use?

I don't use dish soap on mine but you can use it.
Ours our from DH's grandmother and are nice and seasoned so I am fearful to use soap on them!

If you like corn bread with your meals try making it in your new cast-iron pan! Best corn bread of your life! Hmmm now I want chili and corn bread!
I don't use dishsoap on mine but I do think it is ok. I also use mine on a glass-top stove and I don't have any problems (that I know of!). For the most part I pan-sear steaks in it and finish them off in the oven. I don't use it for much else but my hubs uses it all the time.

I never use any soap on mine. Just hot water and a good scrubby brush.

Routine Maintenance
If you buy a preseasoned pan, you can use the pan with little fuss.Reseasoning
If cooking acidic foods or improper cleaning has removed the seasoning from your pan, it will look dull, patchy, and dry instead of a smooth, rich black. You need to restore the seasoning.
I would avoid soap.
I second the pp recomendation for cornbread in a skillet. Especially real (non-sweet), buttery Southern Cornbread.
Pour a little oil in the pan and place in the oven until the pan and the oil are hot. Then pour in the batter and cook as usual. It'll make a nice crispy crust (the best part)!
