Favorite dinner recipe

So I am getting ready to go the grocery store, and I need some recipe ideas for the week. i'm sorta a freak, plan out my menu each week so I don't have to say, hmmm, what's for dinner. Anyway, does anyone want to share about your favorite recipe. It would be much appreciated.

  • We like simple things. The two things I have made that went over amazingly with DH were chicken fajitas (bought boneless chicken, cut into bite-size pieces, cooked in a little butter on the stove w/ fajita seasoning, served w/ sauteed bell peppers & onion, shredded cheese, & sour cream in a tortilla), and steak sandwiches (we love Steak-umms brand steak, it's in the frozen section and already cut really thin.. cook steak on the stove, put on a hoagie roll with mozzarella or provolone, broil till cheese is bubbly, serve w/ A1)

  • This is one I make frequently that's easy: Pork Chops with Mushroom Bread Pudding

    Ingredients:
    2 tbsp. butter
    1 onion, chopped
    1 rib celery, chopped
    3/4 lb. mushrooms, thinly sliced
    1 tsp. dried thyme
    1/2 lb. baguette or other crusty bread, cut into 1/2" cubes (About 1 Qt)
    1/2 tsp. pepper
    1 tsp. salt
    1 1/3 c. chicken broth (low sodium, organic if possible)
    3 eggs, beaten to mix
    2/3 c. half and half
    1 tbsp. cooking oil
    4 center cut pork chops, about 1" thick (2 lbs. in all)

    Directions:
    1. Heat the over to 325. Butter a 9 x 13" baking dish. In a large nonstick frying pan, melt the butter over medium to medium low heat. Add the onion and celery; cook, stirring occasionally until starting to soften, about 3 minutes. Increase the heat to moderately high. Add the mushrooms and thyme and cook the mushrooms start to brown, about 5 minutes. Remove the pan from the heat. Stir in the bread cubes, 3/4 tsp salt and 1/4 tsp pepper. Transfer the mixture to the prepared baking dish.

    2. Stir together the broth, eggs and half-and-half. Pour the mixture evenly over the mushrooms and bread. Put the dish in the lower third of the oven and bake for 25 minutes. 

    3. Meanwhile, heat the oil in the frying pan over medium heat. Sprinkle the remaining salt and pepper over the pork chops. Add the chops to the pan and brown, about 3 minutes on each side and remove from the pan. Remove the bread pudding from the oven after it bakes for 25 minutes and set the pork chops directly on top. Return to the oven and cook until the meat is done, about 10 - 15 minutes or the internal temp of the pork is 160.

  • We make Baked Ziti alot...
    8oz uncooked baked ziti
    26 oz pasta sauce
    1 1/2 cups of water
    2 cups mozzarella cheese

    Add ingredients together and cover with aluminum foil. Bake at 400 degrees for 55 mins. Uncover and bake for 5 mins.
