Jeremy is going to a friend's to play poker, so I get a rare chance to make chicken tonight! (Long story short - apparently the first year we were together, I made too much chicken and now he will rarely eat it).
So what's your favorite way to make chicken breasts?

I love to roll them in stuff or stuff them with...stuff.
I usually season them with salt and pepper and maybe some garlic and roll them in flour, then egg, and then some bashed pistachios. And then I bake them until they're golden and done. Very good.
I've also toasted some pine nuts, and added it to a mixture of feta, garlic, mushrooms, and maybe spinach and then stuffed them into a slit in the side of the chicken. Then I'll season them and bake them.
I make a dish with chicken thighs but it would work with breasts too, if the skin were on (and it's better with a bone in).
I marinade the chicken with olive oil, fresh lemon juice, cumin, paprika, red pepper flakes, oregano, salt/pepper, and fresh thyme leaves, then bake in a dish for 1 hour.
I serve it with bulghar wheat and it's awesome!

This is my new favorite chick breast recipe: Marinade in minced garlic, fresh lemon, mustard, and season with s & p. Place in shallow dish and surround with artichoke heats, kalm. olives, and sliced mushrooms. Bake for 30 mintued and enjoy!!
I usually serve the chicken over sauteed spinach and of course white wine

I have so many - but just made this two nights ago and it was great:
Feta and Sundried tomato stuffed chicken
Pound chicken breast til about 1/4 inch thick, in small bowl combine some feta, chopped sundried tomato, little garlic chopped, chopped basil and oregano - place cheese mix on one 1/2 of the breast, fold over. sprinkle with salt, pepper. take 2 large pieces of tin foil in cross pattern (one over the other), place 1 tsp butter on middle of foil, chicken on top, bring up sides to make little "bowl" - then on top of chicken pour 2 tbsp chicken broth and lemon zest. crimp foil to close completely. bake at 400 for 20 minutes. DELISH.
