I love making the chicken for tacos or enchiladas in the crock pot. I put in frozen chicken, salsa, onion and green pepper, taco seasoning, and a little water. Cook on high for 7-8 hours.
I love to make the chicken for tacos too, and a couple of other favorites of mine are:
Italian sausages- pack of italian sausages (usually 5-6 in a package), jar of plain spaghetti sauce, green bell pepper and onion (sliced). ?Put all in crock pot and cook on low for 6 hours (or until cooked through). ?Serve on soft brat/hotdog buns with mozzarella cheese
Meatballs- I just made these for the first time today. ?1 bag frozen meatballs (original seasoning, not italian), 1 can of cream of mushroom soup, 1 can of cream of chicken soup, 1 small can of evaporated milk (12 oz I believe). ?Mix the soups and milk together and pour over the frozen meatballs in the crockpot. ?Stir to coat meatballs. ?Cook on low for 4-5 hours. ?Serve over egg noodles. ?I also added in about 1/2 cup of chopped onions for extra flavor and a little extra milk and water to thin out the sauce a little bit. ?
the blog link posted above has some great recipes. I make chili in my CP very frequently. I also make this potato chowder and it is sooooo good. My H loves it! It is on our menu this week...

BBQ Beef:
1 roast, 1 bottle fave bbq sauce. Cook on low all day and shred when you get home.
Beef stew:
WIth just us this makes enough for a meal and one to freeze for later
1pkg stew meat
1 pkg baby carrots
2 onions peeled, quartered
2 large potatoes, cut in small pieces
2 8oz cans tomato sauce
Salt, pepper to taste
Combine, cook on low all day 8 hours or so.
