Any good recipes or food ideas that are good for freezing? We just made chili but now I'm at a loss...maybe it's pregnancy brain, anyways, any ideas appreciated!!
This time around I bought more pre-made stuff because I don't have as much time to cook. I went to Costco/Sam's Club and bought some lasagnas and tons of other frozen meals. I love my chicken tortilla soup recipe and it freezes really well...
4 chicken breasts, boiled then either chopped or shredded 1 can Cream Of Chicken soup 1 packet Fajita seasoning 1 can Rotel tomatoes (I like the hot version - definitely gives it a kick!) 1 chopped Onion A couple cloves of garlic 1 can creamed style corn 2 tsp. flour 1-2 tsp. cumin 3 tablespoons butter Cilantro 3-4 cups chicken broth Cheese for garnishment 1 quart milk (I think less is completely fine)
In large pot, sautee onion and garlic in butter. Add flour and stir. Add fajita seasoning, broth and milk. Boil to thicken. Add cream of chicken soup, rotel tomatoes and cream-style corn, chicken and cumin. (I bring to a boil then simmer however long. If your chicken was already cooked, just heat it up. If the chicken was added raw, the soup will need to simmer until chicken is completely cooked. This can be a crock pot meal if you want it to be.)
A favorite around our house that I'm going to make this weekend is taco soup. The recipe is hand written, but I will type out if you are interested. Just reply and I will check back later!
