My sister just had her third, and she didnt want a mini van--but got one and LOVES it. She really had no other option. Any SUV with a 3rd row means the older child has to jump over the middle row to get back there. She didnt like that idea.

If you don't want to give up your car you can get 3 car seats to fit. I have a Cadillac CTS and my mom has a Toyota Corolla. We both have 3 carseats in the back seat. The trick is the Sunshine Radian carseat. It is very thin and 3 will even fit in the back of a Prius. In my car I have a Graco infant seat, Sunshine Radian and Britax Marathon.
What about a large SUV with captain's seats in the 2nd row? Then the oldest child doesn't have to climb over the seats- he/she can walk through to the 3rd row. We have a Toyota Sequoia (because I could just never, ever see myself with a minivan, no matter how many kids we have!) and LOVE it. We also considered the Chevy Tahoe.

I also have a CX9 and LOVE it but to be honest if I had to have 3 car seats I'd probably get something a little larger like the Sequoia, or an Expedition/Navigator. Make sure the 3rd row has the latch system, some don't. I highly agree with the 2 captains seats and one in the 3rd row.
Or take DH to look at a Honda Oddesy. I HATE minivans, but once you're in it and driving you don't really care so much what it looks like on the outside. My friend has one and I nearly caved and bought one because I like hers so much. With all of the auto doors, bluetooth, navigation and the fact that it has much better storage in the back than my CX9 does with all 3 rows of seats up it was incredibly enticing!
Oh, and my reasoning for an Expedition over the Tahoe, I'd prefer a Chevy brand but the Tahoe has more blind spots and seems much wider while driving while the Expedition seemed more manageable and was way easier to park and see out of.
