Thanks for all the helpful advice this morning ladies!
After looking at what is normal for spending on bedding, and talking with co-workers and my sister (who has a 15 month old). I realized that I did not need a bumper or a quilt, so there was no point in spending $331 for a fitted sheet and a bed skirt.

I totally think this is the way to go! I did the same thing (sort of):
I bought an organic crib skirt in "natural" (which turns out to be a creamy beige sort of color) from Pottery Barn for $9.99 (yep, thats all!). Then I registered for coordinating sheets from BRU. My mom got me a Snoopy mobile for Christmas, and I am going to accent with some Snoopy stuffed animals on shelves, and some Snoopy "art" on the walls.
I think going al-a-carte is the way to go!!
Much more reasonable!
Just an FYI - you'll want more than 1 crib sheet. I had 4 for DD just in case we had a really messy night. I would have been fine with 3, but no less than that.
