Help me with my NY Resolution!

Post an easy meal that I can make for dinner.  Post everything I would need to buy too.  Don't assume we own anything lol

  • Here's a quick one-pot meal.  It has a lot of ingredients, but after you chop/slice, it only needs to be cooked for 20 minutes.

    Apart from groceries (see ingredient list below), you will need: knife, cutting board, large pot, measuring cup, tablespoon, teaspoon.

    North African Veggie Stew

    2 Tbsp. olive oil
    1 med onion diced
    1 med carrot sliced
    1med zucchini sliced
    1 lg clove garlic chopped
    14 oz can diced tomatoes (I used stewed tomatoes)
    1 cup veggie stock
    1 tsp. whole cumin seeds
    1/4 tsp. cayenne pepper
    2 tsp. grated lemon zest (1 lemon's worth)
    1 19oz can chick peas, drained and rinsed
    8-10 dried apricots, thinly sliced
    1/4 cup raisins
    Salt and pepper to taste

    Gently saute onions for a minute. Throw everything else into the pot and simmer (ie.stew) for 20 minutes. Voila.

    I make rice (basmati- for 3 people I make 1.5 cups rice, 3 cups water, 1tsp olive oil, 1tbsp whole cumin seeds, 1 cinnamon stick) and serve the stew on that.  It's really SO good.

    3.  Do not blame me if your dh falls in love with the Bacon Wrapped Chicken Breasts or the Garlic Cream Chicken.

  • You could copy our easy Christmas dinner from this year.

    Requires:

    Pot in which you can boil water

    Baking tray

    Pan large enough to fit roast

    Microwaveable dish

    Oven

    Microwave

    Potato masher

    Roast

    Salt

    Pepper

    Garlic powder

    Water

    Little red potatoes

    Olive oil

    Dried rosemary

    Bag of frozen french cut green beans from TJs

    Small bag of almonds

    Butter

     Bag of salad

    Bottle of salad dressing

     

    Sprinkle roast with salt, pepper, and garlic. Cook in 400 oven for 10-15 minutes to sear outside. Turn oven down to 350 and cook roast until it's as done as you like it, according to size (you'll probably want a meat thermometer).

    About 15 minutes before roast is done, boil potatoes for PW's Crash Hot Potatoes. When roast is done, pull out of the oven, let rest. Turn oven up to 450. Prep PW potatoes and cook according to her directions.

    Dump green beans in microwave safe bowl, cook in microwave. Add some butter and almond slivers.

    Dump salad in bag. Put dressing on table.

    If you're with my family, down a bottle of wine over the 90 minutes you're sitting around the table. Otherwise, just eat and enjoy.

  • Need:

    chicken breasts

    2 pieces of swiss cheese per chicken breast

    2 pieces of bacon per chicken breast

    Honey mustard

    any sides you'd like (fresh veggies, bread, etc)

    Directions:

    put chicken breasts on a cookie sheet with 2 pieces of swiss cheese on top, cook at 350 degrees for 25 minutes

    In the meantime- cook bacon, break into pieces

    Spread bacon pieces on chicken, cook an additional 5 minutes at 350.

    Serve with honey mustard to dip in! It's so easy and sooo yummy!

  • We are having tacos... it is super easy because dh is cooking. Haha! actually tacos are good because you can make a batch of taco meat/taco sauce with beans and have it for a few meals all ready to go.

    You can choose to go with soft tacos or hard taco shells... cheese, sour cream, lettuce, tomatoes/salsa, hot sauce. Also, it's nice to have a hot-weather meal in the midst of winter.

  • Nacho Chicken Pitas

    Chicken breast
    Eggs
    Nacho Chips (Like nacho flavored doritoes)
    Pitas (or tortilla shells)
    Mozzarella Cheese
    Lettuce
    Tomato
    Honey mustard (or mayo, or your fav "dressing")

    Cut chicken into strips or bite size pieces (I like bite sized).  Beat and egg and dip the pieces into the egg.  Crush chips (I like to get the pieces pretty fine).  Dip egg covered chicken pieces into crushed chips.  Put into single layer baking dish.  Bake 20 minutes at 425* (or until chicken is fully cooked). 

    Fill pita (or tortilla shells) with chicken, mozzarella cheese, lettuce, tomato, and honey mustard.  Enjoy! :)

    Chicken Breast
    Salsa
    Fiesta Blend cheese (or cheddar if you prefer)

    Bake chicken at 425* for 20 minutes.  Take out of oven, top with salsa and then cheese.  Bake until cheese is melted
