My NY Resolution is to start menu planning and I'd like to give freezing meals a shot. I was lurking on the SAHM board and a woman posted a few of her recipes and I'm looking for more. I'd love to have any recipes that you've done in the freezer that have turned out well.

i love making marinades and popping chicken, pork or beef cuts into the marinade and then freezing. Then thaw overnight and they are delicious! Let me know if you want a couple of marinades I use.
I recently made sloppy joes and froze a portion. When I reheated them in the saucepan I had to add a little water but they were pretty good. I also have a chicken pot pie crock pot recipe that I divide and freeze the insides. I cooked one recently and it was a little watery, but still very good.
Let me know if you want these recipes. Other winners are lasagna and other pasta dishes. Also soups are really good to freeze in individual or family size dishes. I recently used frozen black bean soup and while the rice broke up a lot it was still pretty good. I'd probably make it and freeze it without the rice unless anyone has an idea what I did wrong.
i would love to get your meat marinades. I'm always looking for some!
Sweet Chipotle Grilling Sauce

Serves 8
2 chipotle chilies in adobo sauce
2/3 cup maple syrup
2 cloves garlic, peeled
1 T soy sauce
Place all ingredients in a blender and puree until smooth. Excellent marinade for chicken or pork tenderloin. Serve with mango chutney
Italian Dressing Chicken
Basic Recipe is everywhere, here's a combination:Serves 2
2 Chicken Breasts
1 cup Italian dressing, or less
1 tsp Garlic Powder
1 tsp Hot Sauce
Combine all together and marinade overnight. Grill 8-10 minutes.
Grilled Pork Tenderloin

Serves 4
1/2 cup Italian salad dressing
1/4 cup reduced-sodium soy sauce
1 pork tenderloin (1 lb)
1/2 tsp steak seasoning.
Combine salad dressing, soy sauce and pork in a large ziploc bag. Refrigerate for up to 4 hours.
Coat grill rack with cooking spray before starting the grill. Prepare grill for indirect heat. Drain and discard marinade. Rub pork with steak seasoning.
Grill pork, covered, over indirect medium-hot heat for 25-40 minutes or until a meat thermometer reads 160. Let stand for 5 minutes before slicing.
Greek Pork Chops
From Taste of Home Healthy Cooking April/May 2008Serves 4
2 T olive oil
4 tsp. lemon juice
1 T Worcestershire sauce
2 tsp. dried oregano
1 tsp. salt
1 tsp. pepper
1 tsp onion powder
1 tsp. garlic powder
1/2 tsp. ground mustard
4 boneless pork chops (3/4 inch only)
Combine first 9 ingredients in a large ziploc bag. Add pork and turn to coat. Refrigerate for 8 hours/overnight or freeze.
Coat grill rack with cooking spray before turning on. Grill pork, covered, over medium heat for 4-5 minutes per side.
