Here are 2 of mine that are easy:
Chicken spaghetti
1 can cream of mushroom soup
1 can chicken broth
2 large cans of chicken drained ( or cook about 2 c of fresh chicken in a skillet)
1 sm jar pimentos (don't drain)
2 c spaghetti
1-2 c cheese (mild cheddar or colby jack is what I use)
bake covered at 375 for 1 hr or until creamy, but not runny. Makes 6-8 servings.
Chicken pockets
cream cheese
2 lg cans chicken or 2 cups cooked and shredded
mix chicken and cream cheese until creamy (you can adjust this to how you like), season with onion, garlic, pepper, and italian seasoning to taste
use 2 cans of crescent rolls, pinch 2 triangles together to form a rectangle and put about 1/4 c of filling on one half, fold over other half to make a "pocket", pinch closed. Fill rest of rolls, bake according to directions on can of rolls. Put chicken gravy on top. makes 6-8 pockets depending on how full you make them.
ETA: we also make chicken quesodillas just with 2 tortillas filled with chicken (I cook it in a skillet with salsa, salt and pepper, and frozen pepper and onion mixed veggies, you can also use taco seasoning), put the chicken and cheese into the tortillas, brown on each side in a skillet, serve with guac, sour cream, salsa.
I like tortellini (cheese). I buy the frozen tortellini and mix some heated up spaghetti sauce with it. I will also get some garlic bread sticks to make in the oven. Spaghetti is also easy.
One of those half hams is also good. Just cut the slices you want for your family, and cook in a little water in the microwave (2-3 mins/side). I usually have scalloped potatoes and steamed veggies. You can buy those steam in the bag veggies for a super easy meal/clean up.
My easiest meal? One of those premade stouffers casseroles- lasagna, chicken & rice, etc... They take a while to make in the oven, but they're pretty good. I serve that with steamed veggies and a dinner roll.
Or pre-made crab cakes, rice and veggies is also really easy and super yummy.
I always make tacos when I don't feel like cooking.
I'm not a very good cook so most of my recipes are super easy. I can't remember if you're dairy free or not so some of these may not work for you.
Company Chicken
Place 4 small chicken breasts in bottom of crock pot (I put them in frozen)
Place a slice or two of swiss cheese on top of each piece of chicken.
Combine 1 can cream of chicken, 1 package of Stove Top, 1/2 cup chicken broth in bowl and pour onto chicken in crock pot.
Cook on low for about 6 hours or until chicken is cooked through.
CrockPot Roast
Cube several potatoes and place in bottom of crock pot.
Rub both sides of a chuck roast (I put it in frozen) with creamy french dressing. Place in crock pot on top of the potatoes.
Sprinkle a packet of Onion Soup mix on top of the meat.
Chop carrots and celery (and onion if desired) and place on top of and around the meat. Top with a little bit more creamy french dressing.
Cook on low 6-8 hours or until the meat can be pulled apart by a fork.
Parmesan Garlic Chicken
Combine 1/2 cup grated parmesan cheese, 1 envelope Italian salad dressing mix and 1/2 tsp garlic powder in bowl.
Wet chicken with water and roll in cheese mix until covered.
Bake in a shallow baking dish at 400 degrees for 20-25 minutes or until chicken is done.
Chicken Chili
Mix 1 med zuchini (chopped), 3 cups cooked chicken (cubed), 1 jar salsa, 1 can corn, 1 can black beans, 1small can chopped green chilis, 1 can tomato sauce, 1 can pinto beans, 1 can chicken broth, 3 tsp chili powder, 1 tbsp garlic and 1 tbsp cumin in large pot and heat until warm.

Spaghetti is always my go-to when I don't feel like cooking. It's my favorite too:)
Chili in the crock-pot, or really anything in the crock-pot, is also another go-to for me.
I love the Company Chicken recipe above. Sounds similar to your Swiss Chicken recipe, which has become a favorite in our house.
Ditto tacos. It's our easy go to meal. Sloppy joe's and tater tots.
Chicken and rice--1 can cream of chicken soup, one can cream of mushroom or celery (I like celery better), 1 can water plus a little more. Bring to a simmer, add 1 cup rice (it's really good with basmati, but plain white works too). Stir. Pour in a baking dish, put 4 chicken breasts on top (I use either bone in or boneless, increase cooking time for bone in), dot with butter and sprinkle with paprika. Cook at 350 for an hour or so, I usually check halfway through, stir the rice, and add more water if the rice needs.

1 package of Louis Rich or Tyson Southwestern Chicken Strips (precooked)
1 small jar of Chi Chi?s Picante or Salsa
1 (8oz) package of shredded colby jack cheese
(leave approx 1/2? on perimeter)
1 package of taco seasoning
15oz can of tomato sauce
15oz can of corn drained
2 - 15oz cans of kidney beans, rinsed and drained
Shredded cheddar cheese
Sour cream
Drain the ground beef then place in crockpot
Add taco seasoning, tomato sauce, corn, and beans
Cook on low heat for at least 2 hours
1 bottle Kraft Sundried Tomato Vinaigrette dressing
1 small container of Feta Cheese (reduced fat if you can find it)
Layer frozen chicken tenders in a 9x13 pan
Pour dressing over chicken (enough to coat)
Top with Feta Cheese
Place in oven and bake for 1 hour
2 cans cream of chicken soup
1 soup can of white wine
Seasoning Salt
Garlic Powder
Mix soup + wine in bowl
Place chicken breasts in baking dish
Cover chicken breasts with wine + soup mixture
Sprinkle seasoning salt and garlic powder over top
Bake for 1 hour
Tuscan Chicken Pasta
1 1b of chicken (cut into thin strips or cubes)
1 can of cannelini beans
1/2 cup of roasted red peppers
1 cup baby spinach
1 clove fresh garlic (finely chopped)
1 teaspoon Rosemary
1/2 teaspoon olive oil

And it was super easy and yummy! I altered the recipe only by adding 1/2 cup sour cream and I didn't have mushrooms.
I usually do a chicken and pan sauce type deal for quick meals....
Just get those thin sliced boneless skinless chicken cutlets from the grocery (or tenderloins or regular chicken breasts and pound them thin).
Sprinkle with salt and pepper (and a little garlic powder too if you like - or smash up a garlic clove and toss it in the pan).
Heat up a little splash of olive oil and brown the chicken on both sides (takes all of 5 minutes when it's thin).
Take out the chicken and set it on a plate. Deglaze the pan with a healthy splash of white wine or chicken broth/stock (like a quarter or 1/3 cup). Squeeze in the juice from half a lemon. Throw in a little pat of butter (like a teaspoon) and swirl it all around.
If you're feeling extra fancy toss in a tablespoon of capers... or throw in some chopped up canned artichoke hearts.
Put the chicken back in the pan with the sauce to warm up. Serve with some steamed veggies and some rice or nice crusty bread.
Voila... yummy dinner in about 15 minutes.
Pulled pork sandwiches. Pork and barbecue sauce in crock pot, shred it after it's done, plop it on a bun, voila. Add some oven fries or something and a veggie and it's one of my favorite lazy meals.
I'd also do the stuffed chicken breasts or pork chops from Kroger in the crock pot, and a bag of stuffed shells from the frozen section. Add salsa chicken, there's half your week with almost no work.
I've given this one before, but take chicken breasts, top with swiss cheese. Mix a can of cream of chicken with a can of white wine, pour over the top. Top with seasoned breadcrumbs, bake 45 min at 375. Serve over egg noodles with a green veggie and/or salad.
