I actually just responded to a similar post on 3rd tri so here's our weekly menu - maybe one of them will inspire you:
This week's menu:
Sunday: chicken tacos
Monday: breakfast (pancakes and bacon)
Tuesday: chicken sandwiches, steamed broccoli and carrots
Wednesday: roasted pork stuffed with apples, butternut squash, green beans
Thursday: filet wrapped in bacon (for new years, since we're not going out this year), blue cheese crushed potatoes and green beans
Friday: homemade pizza with mozerella and basil
Saturday: eat out
Potato soup is how I injured my finger (chopped off the top) two weeks ago. I am officially on a potato soup hiatus!

Details please! How much meat, how long, low or high, red potatoes or other etc.
I got a 3 lb roast, put in 6 (regular) potatoes cut up into pieces, and a bag of baby carrots. Yes I'm planning on leftovers
Put the carrots and potatoes in, then lay the meat over it. I put meat tenderizer, garlic salt, pepper on the meat. Then I slice up a yellow onion and put that on the meat. Put 3 beef bullion cubes on the meat as well. Add 2 cups of water. I'm cooking on low for 6-7 hours.
