  • I think you need a pasta in there somewhere.

Maybe use the leftover roasted chicken for Chicken Alfredo with steamed broccoli?

    Potato Soup with BLT's

Potato soup is how I injured my finger (chopped off the top) two weeks ago.  I am officially on a potato soup hiatus!

  • What about a pasta bake? Tonight I'm making one with penne pasta and a mix of alfredo & tomato sauces, and I'm adding pre-made meatballs cut up into smaller pieces. I'll add some shredded cheese on top and pop it under the broiler to get all bubbly.

I got a 3 lb roast, put in 6 (regular) potatoes cut up into pieces, and a bag of baby carrots.  Yes I'm planning on leftovers :)

Put the carrots and potatoes in, then lay the meat over it.  I put meat tenderizer, garlic salt, pepper on the meat.  Then I slice up a yellow onion and put that on the meat.  Put 3 beef bullion cubes on the meat as well.  Add 2 cups of water.  I'm cooking on low for 6-7 hours.
