i going to do scalloped potatoes with ham. slice potatoes thin, add ham, some milk, a can of cream of mushroom soup, some velvetta cheese and cook! that is if you do it homemade. tonight i am cheating and using a box of scalloped potatoes and just adding the ham
We call it "Cowboy Chili" but it's just white bean chili with ham. I like to top it with avocado slices and monterey jack cheese.
You need: white beans (I use canned to save time, no soaking required!), an onion, a carrot, 2 celery stalks (sautee veggies together first), chicken stock, the leftover ham diced up, and chili spices. Throw it all in a crockpot and leave on low all day. Adding lime juice, cilantro, and green chiles can make this more of a Tex-Mex chili if you prefer.

I had risotto in the pantry so I made it according to the usual recipe (chicken stock, added some diced garlic, etc) and then threw in about 1/2 cup diced ham about halfway through the cooking process. It turned out delicious. I added the parmesan cheese at the end and it was probably the best risotto I've made yet. Enjoy!

yes yes yes - I was going to suggest the three things mentioned above:
some kind of ham, bean and veggie soup
quiche or an egg scramble with ham and veggies and cheese
scalloped potatoes or homemade mac and cheese with ham
