We just got back from a week away, so it'll probably take me until next week to get back into my regular cooking groove, but here's what I've got so far:
Monday: Rotisserie chicken, rice, veggie of some sort
Tuesday: Roasted shrimp with thyme and cherry tomatoes and sweet potatoes (And cook and freeze chicken soup for Friday with leftover rotisserie chicken)
Wednesday: Parisian tuna sandwiches
Thursday: White sauce pasta with sauteed mushrooms, diced tomatoes, and green olives (my own weird creation; might sound strange, but it's delicious!)
Friday: Southwest style chicken soup (thawed from earlier in the week)
garlic and olive oil pasta with thin crust homemade cheese pizza
chicken fried rice
king crab legs and baked potatoes
NYE - quiche in the AM, shrimp cocktail, meatballs, black eyed peas, 7 layer dip and chips. buffalo chicken dip and crackers throughout the evening and night
That is as far as I have gotten.
In addition, DH is home all week so I have made pasta salad and pinwheels and have soup, sandwich and salad stuff for lunches.
I'm still on bedrest so I only have through Wednesday (when my parents leave):
S - baked stuffed chicken
M - left overs (we have tons) or spaghetti if Mom wants to make us extra sauce
T - shepherd's pie and salad
W - spaghetti with garlic bread and salad
Th-S - whatever we can find in the freezer, etc. that DH can cook or throw together. I *should* be off bedrest sometime next weekend (I hope) at least enough to be able to cook. Then I'm going hard at making more freezer meals before this little boy comes (assuming I make it to this weekend).
Monday: Dinner at MIL's Tuesday: Burrito night (beef and bean, with corn tortillas for DD) Wednesday: Chili and cornbread (Slow cooker) Thursday:Steaks, shrimp cocktail, mashed potatoes, and root beer floats Friday: Zestly Turkey Breasts with Artichoke Hearts, salad, rolls (Slow cooker) Saturday: Chicken salad on croissants Sunday: Spaghetti and meatballs
I've been trying to build menus that are either gluten free or that I can quickly whip up a GF version for DD. It's been a challenge, but also very fun. I found rice penne at the Asian marketplace this weekend that I can't wait to try on Sunday!

Only 3 days planned so far:
Mon: grilled chicken, rice and veggies
Tue: shrimp fried rice (using leftover rice from Mon)
Wed: pizza (homemade crust, sauce with cheese. Might add a veggy or two)
I am all messed up this week because DH is off the whole week (and was off all of last week)... He eats so much more when he is home!
Tonight - Pulled Pork Sandwiches
Mon - Chili Hot Dogs
Tues - Sushi / Japanese Restaurant? We have a gift cert for this place that we've been meaning to use forever.
Wed - Spaghetti
Thurs - New Year's Eve Party
