I would potentially add a tsp of peppermint extract in the future.
I did this last year and it didn't work out well for me - they were too thin, for lack of a better word. I recommend using mint oreos and adding the crushed candy canes to that :-)
Aldi's has knock off Peppermint Oreo's for like 1.29 that I used...and no..these are MINT oreos they are PEPPERMINT..so maybe they are a knockoff of Joe Joes.

I actually did this yesterday. I crushed up PEPPERMINT OREOs and added a tsp peppermint extract...and decorated teh top with crushed candycanes.
They came out great.
They didn't come out too soft for you? Mine were mush and really hard to form balls, even after being chilled.
Nope..Mine were fine...they felt a little greasier when forming the balls, and they were a tad softer but not enough I couldn't deal with them. I actually like the taste / texture better then the regular ones.

Re: Oreo truffle-making tip.
That is brilliant!
I've braved the oreo truffle, I'm terrible at dipping it in the melted chocolate, but they are so good!

FYI mint oreos =/= candy cane joe joe's.
The oreos make me want to vom in comparison.
I could eat a whole package of mint oreos in a sitting. Dipped in milk, of course.
Right hand to God, I pulled out the Joe Joe's to use them & Nate was all OH MY GOD, NOT THE JOE JOE'S.
So I pounded candy canes instead.
