I'm in charge of bringing a salad for Christmas. I normally just buy some romaine, top with croutons, and dressing. However, I feel like I need to fancy it up a bit. How do you make your salads?
At home: the things you mentioned plus red onion, cucumber, and some sort of cheese. If we are making it to take some where I'd cut up a tomato as well (and leave it on the side), olives, carrots, red pepper and celery.
mixed greens (or green leaf), walnuts, cranberries, feta, and apples (or pears). I like it with honey mustard dressing, but you can use anything.
For regular tossed salads, I'll use anything I can find ... chick peas, peas, beets, nuts, hard boiled eggs, tomatoes, olives, blanched green beans and sugar snap peas, green olives, carrots, celery, red onions, sunflower seeds, cheese, etc.
If I'm taking it somewhere I will top with croutons, cucumbers, carrots, tomatoes and lots of cheese. I do not put dressing on it, I just take a few different kinds. If I'm making it at home, I only put lettuce, tomatoes, croutons and tons of cheese!

Spinach Harvest Salad- spinach leaves, feta cheese, spciy pecans, sun dried pears, sweetened dried cranberries, with balsamic vinaigrette dressing
Greek Salad- romaine lettuce, feta cheese, cucumbers, kalamata olives, cherry tomatoes, red onion, greek dressing
Cobb Salad- romaine lettuce, eggs, cheddar cheese, cherry tomatoes, and bacon- put an assortment of dressings out as many can go with it
Ceasar Salad- romaine lettuce, croutons, parmesan cheese, black pepper, ceasar dressing.
These are the main salads that I typically bring to an event depending on the crowd and/or what is being served for dinner.

For thanksgiving I made one with field greens, apples, pears, grapes, pecans and cheddar with a apple juice vinegarette....it was really good!
I also like spinach with feta, strawberries, pecans or walnuts and a raspberry vinegarette.
7 layer salads are pretty common to take to parties.
