I have always tried to give DS as many finger foods as possible.
I started the three meals a day around 7 months. Back then it was fruit and oatmeal combo for breakfast, veggies and puffs for lunch, and a meat combo puree for dinner (pedi did not recommend meats until 8 months though).
Now we do fruit chunks, cheerios, and cheese (sometimes pancakes, waffles, nutrigrain bars, or mini muffins to replace the cheerios) for breakfast. For lunch we do grilled cheese, easy mac, spaghetti o's, lunch meat, or quesidilla, along with a veggie and grahams. Dinner is pretty much whatever we are eating as long as it is not too greasy (if we are out to eat though, he usually gets a kids meal, which is not healthy... we don't go out all that much though).
I let him eat on demand so when he's giving me hunger cues, I offer him solids. Granted, he's still drinking 40 oz of BM/Formula during the day so I KNOW he's getting all of his nutrition, but I offer and if he refuses, I don't push it. If he seems hungry and is taking what I'm offering, I give it to him. Surprisingly more simple than I thought to be honest.

When we started DD would eat about 4.
So far we only do breakfast and dinner, his schedule is usually something like this:
8am: 8 oz bottle
9:30 am: breakfast, fruit/oatmeal combo
Noon: 8 oz bottle
4pm: 8 oz bottle
5:30 pm: veggie/rice combo and a fruit
7:30pm: 8 oz bottle
We will probably start doing "lunch" after his 9 mo check-up.

Currently we usually do something like this for meals
Breakfast: Yo Baby Yogurt and 4 oz formula
Lunch: 2nd Stage Fruit, 4 oz formula
Dinner: 2nd or 3rd Stage Meat/Veggie Combo and 1/2 fruit, water
(we also do snacks in between lunch and dinner and a bottle before bed)
