Holiday GTG recipes

I know there were some requests for recipes from the Holiday GTG.  If you want to post them here or email them to me (naclh2otaffy at gmail), I'll update our Nestie cookbook with them and republish it over the holiday break for everyone to download.  I'll even include the infamous KA chicken tacos in the cookbook so that everyone has the recipe.  :)

  • Peppermint Eggnog Punch

    1 quart peppermint ice cream, softened

    4 cups eggnog, chilled

    1 cup rum or 2 teaspoons rum extract, optional (I used rum extract to keep it alcohol free at the GTG)

    2 cups carbonated water, chilled (I used Perrier)

    Miniature candy canes, optional

     

    Put the ice cream in a punch bowl.  Stir in the eggnog, rum extract (or rum) and mix until most of the ice cream lumps are gone.  Add in carbonated water.  Line the rim of the punchbowl with candy canes to add festive touch.

    I'd give you the recipe, but I don't think HEB will give it to me. =)

  • Warm & Creamy Bacon Dip

    16 oz sour cream
    8 oz cream cheese softened
    3 oz bacon bits (I use real bacon pieces rather than imitation bacon bits)
    2 cups cheddar cheese
    1 cup chopped green onions
     
    mix all ingredients together and spoon into a 1 quart baking dish. bake at 400 degrees for 25-30 minutes. serve with Wheat Thins.

    This is one of the things that looked SO GOOD.  Bacon is no bueno for me right now, but man, once my food aversions pass, I'm so making this.

  • recipe: purchase store bought cookies. Place on table.
  • Deviled Eggs

    Ingredients

    • 12 eggs
    • 4 tablespoons mayonnaise
    • 2 teaspoons yellow mustard
    • 2 teaspoons sweet relish
    • Salt
    • Pepper
    • Paprika, for dusting

    Directions

    Place eggs in a large wide saucepan and cover with cold water. Bring to a boil for 12 minutes. Remove eggs and and cool in refrigerator. Remove shells from eggs and slice in half lengthwise. Separate egg yolks and place into a bowl. Place whites on a separate plate. Add mayo, mustard, relish and salt and pepper, to taste, to yolks and mash together with a fork until creamy and smooth. Using a large star tip and resealable plastic bag, pipe the yolk mixture back into each egg, enough to fill yolk holes completely. Dust tops with paprika. Refrigerate. Serve cold.

  • Forgotten Cookies

    2 egg whites

    2/3 c. sugar

    1 tsp vanilla

    pinch salt

    1 c. chocolate chips

    1 c. pecans

     

    Preheat oven to 350* and line 3 cookie sheets with foil.

    Beat egg whites until foamy. Gradually add sugar, beat until stiff. Add vanilla and salt, blend well. Fold-in chocolate chips and pecans.

    Drop by spoonfuls onto cookie sheets. Turn OFF oven and bake at least 4 hours (or overnight). Make sure husband doesn't open oven before time is up. Carefully peel cookies from foil.

    Yields approximately 2.5 dozen cookies.

  • Christmas Bread Wreath
    Betty Crocker

    Ingredients:
    ? c. freshly shredded Parmesan cheese
    1 lb loaf frozen bread dough, thawed
    1 Tbsp olive oil
    1 small garlic clove, minced

    *1 teaspoon Italian seasoning (my addition)

    Directions:
    - Prepare cookie sheet.
    - Sprinkle 2 tablespoons of the cheese onto flat surface.
    - Roll bread dough in cheese into 24-inch rope.
    - Place on cookie sheet, forming circle; pinch ends to seal.
    - Snip dough 16 times from the outer edge of the circle at about 1 1/2-inch intervals, cutting two-thirds of the way through, using kitchen scissors.
    - Lift and turn every other section of dough toward the center of the circle pinching ends, so the dough resembles branches if desired.
    - Cover and let rise in warm place 1 to 2 hours or until double. (Dough is ready if indentation remains when touched.)
    - Preheat oven to 350 degrees.
    - Mix oil, garlic & nItalian seasoning; brush over dough.
    - Sprinkle with remaining 2 tablespoons cheese.
    - Bake 25 to 30 minutes or until golden brown.

     

     

    I tried a new recipe for the artichoke dip.  I did not like it nearly as much as I like mine usual one so I am not posting.  

  • Meatballs

    • 1 cup ketchup
    • 1 cup brown sugar
    • 1 tbsp Worchester sauce
    • 1/2 onion chopped

    Mix sauce ingredients and pour over frozen meatballs.  Bake until meatballs are cooked.

  • Bacon Goodies

    Sleeve of Club Crackers

    Kraft Grated Parmesan Cheese (I used the three cheese blend)

    Package of thin cut bacon, cut slices in half

     

    Put a cookie cooling rack inside a jelly roll type cookie sheet.  Line the club crackers up on the cooling rack.  Put 1 teaspoon of Parmesan cheese  on each cracker.  Wrap each cracker with 1/2 a slice of bacon so that the entire cracker is covered in bacon.  Bake in 250 degree oven for about two hours.  Can be frozen and reheated at 350 for about 10 minutes before serving.

  • Bacon Appetizer Crescents

    • 1 package (8 oz) Cream cheese slightly softened
    • 8 slices bacon crisp and crumbled
    • 1/3 cup Parmesan grated
    • 1/4 cup onion minced
    • 2 tablespoon Parsley fresh, chopped (or you can use dried)
    • 1 tablespoon Milk
    • 2 cans Crescent rolls

    Preheat oven to 375. Mix cream cheese, bacon, Parmesan cheese, onions, parsley, milk until well blended. Set aside.

     

    Separate each can of dough into 4 rectangles, press perforations together to seal. Spread each rectangle with 2 tbsp of cream cheese mixture. Cut each rectangle into 4 slices lengthwise. Roll up and place on baking sheet and bake 12-15 minutes.

  • Pan Fried Onion Dip

        *  2 large yellow onions
        * 4 tablespoons unsalted butter
        * 1/4 cup vegetable oil
        * 1/4 teaspoon ground cayenne pepper
        * 1 teaspoon kosher salt
        * 1/2 teaspoon freshly ground black pepper
        * 4 ounces cream cheese, at room temperature
        * 1/2 cup sour cream
        * 1/2 cup good mayonnaise

    Directions

    Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.) Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt, and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.

    Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth. Add the onions and mix well. Taste for seasonings. Serve at room temperature. 

     

    I change up the recipe and just use 1 onion and half the butter and oil though,  2 onions is a little to much
