candymaking dilemma

where the hell do I buy something called "dipping chocolate"?

This year I will be attempting to make assloads of marzipan candies for Christmas gifts for everyone I know.  Today I bought the marzipan and almond paste, and I know I can get all the other ingredients at my grocery store.

However, the recipes all call for this "dipping chocolate" but nothing in the chocolate section of my grocery store's baking aisle has anything by that name.  I googled and saw where I could maybe use Ghirardelli's baker's chocolate w/ a little vegetable oil (like 1 tsp oil to 8 oz chocolate) and melt in a double boiler.....anyone know if this really works?

Help me if you can, all you cooking/baking experts!  If you do, I'll send you candy and show you my boobies.

  • Do you have baking supply shops in town.  Michael's or Hobby Lobby usually has it too,  in the cake decorating aisle.  It's really just chocolate that melts well If you're going to make you're own,  I would use butter(or shortening) instead of veg oil it'll set up better when cooled

    LOL at the thought of specialty shops in this town (small, rural -- we're lucky we have a WalMart AND Kroger)

    Ditto this!  Sams sold some Giradelli candy coating that worked well too.  To be honest, I don't know why you can't just melt regular chocolate chips and use them.  They should harden back to the way they were.

    Even if you keep it over a double broiler the whole time?

  • If you have a cake decorating supply store, they should carry dipping chocolate. I usually just melt chocolate chips in double boiler (a pot and stainless steel bowl is what I use)  and add crisco till it gets to a thinner consistency. It works just as good and for me tastes better most of the time.

    I've also used wax before and it works. Start with a little and keep adding until it gets thin enough to work with. It all depends on how much chocolate you are going to use. So start small and keep adding if needed.

    Walmart should have some.  Check the Cake Decorating Isle, near the crafts.

  • Look on the back of the baking chocolate packages - the ones I always use have "recipes" for dipping things into it, I have never had good luck with mixing oil into chocolate - it doesn't want to harden for me after. Another choice is if you have a baking otr craft store that sells baking goods (like Michaels) they have candy pastilles that melt and dip very easily. Good luck!

    It gets gritty if you keep it there to long....Chocolate is finicky
