We are moving on Sunday so most of my coooking stuff is packed away. Any good/easy 1 pot/casserole type meals you can suggest?? I can't think of anything! Cooking mind blank.
potatoes (fingerling, if you want it REALLY simple)
onion (chopped - in big pieces)
mushrooms (sliced) - if you like mushrooms
1 packet Hidden Valley Ranch mix (the powdered stuff) (i packet per 2 cans cream of mushroom)
1-2 (about .5 can per person) cans cream of mushroom soup (condensed)
In a bowl mix together ranch mix and cream of mushroom.
for each person:
Lay out 2 pieces (one on top of the other for double thickness) of tin foil and place chicken in the center. Add carrots, potatoes and onions (as much as you want). poor the cream of mushroom mixture over everything.
seal up the food in a pouch form
put in the oven at 375 for about 40-45 min if you're cooking a chicken breast, less for thigh.
