I'm having a hard time too. The stuff I normally have is now making me sick just thinking about eating it. So, I'm stuck at work with a lunch that I don't want to eat and not eating obviously is not good. :-(
Actually...I can't pack my lunch anymore because I never want it by time lunch hits! I'm lucky that I work at a retirement home that (usually) serves great food, so I pretty much just get my lunch here (it only costs me $1.75 for a staff lunch), and the meals are nutritious which is good. I had chicken a la king today from the kitchen - yummy!
I usually pack snacks like clementines, grapes, jello, dry cereal, etc to tide me over the rest of the day.

Usually I pack whatever left overs we had for dinner the night before (so today it'll be homemade chilli) and a snack like a granola bar or something, and a diet coke (sweetened with splenda).
I'm obviously not packing enough because its 2:20pm and I've already plowed through it all... in between m/s I just eat constantly....but what I packed today was an apple, banana, yogurt, english muffin (for breakfast), PBJ sandwich and 2 granola bars.. I think I may need to buy a bigger lunch bag!!
Usually leftovers from the night before. I love bologna sandwiches but I don't think I"m supposed to eat bologna (I guess it's like hot dogs and lunchmeat). I usually bring a granola bar for breakfast, yogurt for mid-morning snack, and string cheese or cottage cheese for a late afternoon snack.
I love to snack so I pack grapes or pineapples. Sometimes both. Chips and a cheese stick. Nutrigrain bar and a fruit roll up (I steal these from the kids, lol). For my main course I pack a small portion from the previous night's dinner. If no leftovers, I pack oatmeal or a sandwhich.
