LOL thanks to Jen...

I'm in charge of the stuffing this year!  I told my dad about the stuffing she makes and he said "ok, you're making that.  return the stuff i bought for mine."  LOL  so now I have to make stuffing for 20 people!!  And i've been craving it soooooo much.  I'm very excited!

  • Yummy yum yum! :) You are in for a treat! The recipe is very easy to multiply. I made it last year for a big crowd and had no issues. The only thing that is going to take you forever is to get all the onions caramelized. Be patient...I did it in a few batches but each batch took me 20 minutes or so. You just have to wait, wait, wait, wait...let them simmer as long as they need to until they are nice and soft and brown. You don't have to stir them constantly, but you don't want to go too far away so that you can keep an eye on them. If anything make sure that you pre-chop your onions the night before to save yourself that step, and then whenever you are ready to start making the stuffing, immediately throw in the first batch and get them cooking while you do the other prep work (chopping the corn muffins, etc.)

  • Oh, and esp. since you are making a big match, don't skip on the liquids (the heavy cream and chicken stock). Follow what the recipe calls for, but if when everything is all mixed and you are ready to put it in the oven, you see that it's a little dry, don't be afraid to throw in a few more splashes of cream and/or stock to make sure that it comes out nice and moist. You don't want it to look soggy or mushy, but it should def. be soft and moist pre-baking. You'll get a lot of oil from the onions and sausage so it shouldn't be a problem, but have a little bit of extra cream or stock on hand just in case.

  • thanks for the tips!!  should prep everything the night before and assemble it and just pop it in the oven the day of?  do you think that'll work?
  • Yes, I think that would totally work! Have everything chopped and cut up and ready to go and then tomorrow all you have to do is cook the onions and the sausage, mix it all together, and put it in the oven.
