I am almost embarrassed to say this, but I'm 36 years old and have never baked a pie. We were asked to bring pumpkin pies to Thanksgiving dinner. I was going to do my normal go to the store and purchase them routine, but thought maybe it's high time I learned to bake one.
I'm sure I can handle the assembling of it, but am worried that I'll over/under cook it. How do you tell when it's just right?

I just did my first one last night. Pumpkin! I used the Libby's recipe. Easy and delicious!! (seriously, really really easy!)

I am not sure you can really overcook pumpkin pie. It stays pretty moist. I take mine out of the oven when the center is no longer jiggly. I have a yummy pumpkin pie recipe that calls for melted vanilla ice cream

Yep, I started out with this one as well! It was super easy, and I'm no baker.
ETA: I also use pre-made crusts. I'm no fool.
This recipe was also super easy. I used two eggs instead of three in the topping and 2/3 cup of light corn syrup because it seemed like a lot of liquid, and a woman who reviewed it said that she did it. It came out perfectly.

For me there's no point in making it from scratch if you're not going to make the crust (which is super easy to anyway....)
