TTC After a Loss

4 PB rolls down.....16 lbs of sweet potatoes down....

and I'll be two steps ahead for tomorrow! The potatoes are in this massive bowl cooling down. They'll be in the fridge overnight and ready to fix the sweet potato casseroles tomorrow!

Tomorrow I have to fix 2 chess cakes, 4-6 more pb rolls, cranberry relish/salad and finish the sweet potato casseroles!

I'm looking forward to dinner tomorrow night!!! And even BETTER dinner on Turkey Day! (Ofcourse I think my family cooks better than dh's family. Don't we all?)

  • My MIL is a MUCH better cook then my mother... I get so excited when she comes to visit because I give her a list of food to make me.

    I agree. My family cooks better... but in my case DH agrees. My mom and BIL are awesome cooks and they make dinner every year... so tasty.

  • My MIL is okay, although she cuts corners on the gravy and I hate her gravy. She makes some soups that taste just like watery broth. ICK.

    Wait a minute, you can cook your potatoes ahead of time??? Does this work for mashed? I usually just peel & cut them and stick them in a pot of water in the fridge. then the day of I boil and mash.

    It's for sweet potato casserole.....not sure it would work for smashed regular potatoes.

    I've not done this in the past, but I have to make 3 casseroles this year and my MIL says this is how she does it. We'll see. Usually I boil them, smash them, bake them all the morning of the dinner. This time I boiled them, smashed them (kept the drained juices) and will be mixing the flour, water, eggs, butter and brown sugar in tomorrow. Fingers crossed that my MIL's tip helped and not harmed my lovely sweet potato casserole (souffle??sp??)
