Cutting out refined sugar and white flour...

What are some options for sweetener (like in my plain yogurt or tea)?

And for recipes like cottage cheese pancakes, can I just replace all of it with whole wheat flour?

I'm very much a carb girl so this is not going to be easy for me! Any tips or recipes for yummy things that leave those out?

  • honey is terrific in yogurt (especially greek yogurt) and I like it in tea too!

    I wouldn't substitute whole wheat for white flour completely.  I've done that before with muffins and ended up with really dense hockey puck type muffins.

    for white flour: If you plan to replace *all* flour in a recipe with whole wheat, my mom recommends the Trader Joe's brand of wheat flour, as it's finer & lighter. If you use a different wheat flour, you will need to increase the rising agent, whether it's yeast, baking soda, etc. 

  • For sweetener, you could switch to turbinado sugar. In plain yogurt, you could add a fruit or the agave nectar as mentioned.

    I have completely switched to Whole Wheat flour. I rarely have to change amounts.

  • I found a recipe for oat waffles so it makes me wonder if oat flour would work as a replacement in other recipes.

  • I like to mix strawberry or other all-fruit preserves in low-fat or non-fat plain yogurt.  Plain fruit works well too.

    You can substitute wheat for all the white flour, but the end product will be fairly dense & heavy.  Most recipes call for 1/2 wheat & 1/2 white for the best result.

    No, don't go with whole wheat flour, it will mess up your recipe. Go with no more than 25% whole wheat flour (yes, I've been reading Cook's Illustrated lately, and they tested it ;) Get some less refined all-purpose and you should be fine.

    It's all about substitution IMO. Go with sweeteners, just not refined sugar. Go with flour, just not refined flour. You'll still get the benefits, I swear :)
