I was recently diagnosed with GD and met with the dietician yesterday. One quick question: for those who cook, how do you know the portions of each? For example, if I made a pot of chili, how do I know how many carbs and meat are in my bowl?
If you overload the chili with meat you can probably get away with 3/4 of a cup as your serving. Otherwise, for non-overloaded chili it's probably only a half cup because of the tomatoes and beans.
I just look at all the labels of everything I'm using to cook with and add it all up and eat only that much. Once you get used to what is higher in carbs and what isn't, it really shouldn't be too difficult to figure out... and when all else fails, try to eat more meat and veggies and limit the higher carbed products. It also depends on how many carbs you're allowed. For me, I can have 50-60 for lunch and dinner which is actually a lot and sometimes hard to meet. If I was having chili, I'd have probably 3/4 cup to a full cup of chili, making sure there was lots of meat, along with a couple crackers.
How I have dealt with this issue is to cook with recipes that include the nutritional breakdown per portion. This way I know what I am getting. (And, I follow the recipe which isn't my usual habit!)
