I say it the way I say fat and suit. You don't really pronounce the hard T, but that's normal. In fact, my brother took some class in college about development of languages and accents and they spent a whole class discussing the various pronunciations of T. Like in the words matter and fatter you don't pronounce the hard T either.
My friend's mom, who is Canadian, does pronounce the hard T in all the words I mentioned above. It definitely sounds funny to my ear.
The short form of Matthew is Matt ... I have never seen it shortened to Mat. I wouldn't worry overly about how much emphasis is placed on the T at the end of the name as most people will understand that you're saying Matt and something else.
I say Matt and mat the same way. I don't add extra emphasis on the t's to pronounce 2 of them. Make sense? It is a nice name though...my DH didn't like it.
