My DH uses a Flip for work when he is out recruiting. He said he likes it..works well for what he needs, easy to use and convienent. The only issue he has with it is that it isn't compatable with the computer evaluation program they use but obviously that wouldn't be an issue for your family!
I have the Flip HD and absolutely love it. It is really mistake-proof. Even if you are shaky, the video isn't. It is so easy to pick it up turn it on, and point, click and tape something within 10 seconds. So you really would never miss those moments that happen in an instant. And to download the video, you just attach the camera itself (has a built in USB) into the computer, like you would an ipod. i really recommend it!
I have the Flip Ultra HD and so far I love it! I just got it about a month ago and haven't had the chance to really play around with it yet, but the little bits & pieces I have recorded have come out great... and the clarity of the speaking is ridiculous! I was taping the cats and had the tv on kind of low, but when I played it back all the sound came out really clearly. I would definitely recommend.
And depending on what you're spending, they sell cases, extra batteries, and a power adapter you can add with it. It charges through the USB port when you have it hooked up to the computer, but if you plan to take it out with you when you travel you may not have that option to charge it. The power adapter I got lets you charge it through a normal outlet. The extra battery would also solve that problem too. Hope that helps!
Oh, and regarding the HD/regular versions... we got the HD because it had a bigger screen, more memory, and when you playback through the TV it shows up in HD. This was really more for DH than me.

We don't have one yet, but DH is getting one for Christmas. He's done a LOT of research on them, and apparently the Kodak ZI8 has gotten much better reviews and is about the same price. That's the one he's going to get.

i have a flip and it's great for short little videos. the sound pickup is actually pretty amazing. and you can make stills from the videos. but the quality isn't the best (i have the reg, not HD). but i don't think any of them hold more than 60 minutes. not sure. i use them to record my students for reading inventories and things like that.
