last time i made it it was great. this time it just sucks. can someone give me a quick run down of what i'm supposed to have in it? i lost the recipe and apparently i am not cool enough to wing it.
i have a bunch of cans of stuff, oregano (ground - I forgot to buy fresh), basil, garlic, and onions.

I basically 'wing it' when I do my sauce...but here is what I do. First, I saute an onion and a green pepper in a tbsp of olive oil. Then I add a large can of whole peeled tomatoes that I crush with my hands. Then I add a large can of diced tomatoes (usually the Italian seasoned ones), a reg size can of tomato paste, and I season it with pepper, oregano, basil, and a ton of minced garlic. I also add a couple tbsp of brown sugar to cut the acid. I let this all simmer in the pan and keep tasting it to see if I need to season it more. Once I think it's seasoned enough, I transfer it to a crockpot and let it cook on low all day.
For meatballs, I use a pound of meat, one egg, parmesan cheese, Italian breadcrumbs, and 1/2 cup of the sauce. This makes them so moist! I bake them at 325, for fifteen minutes on each side....then add to the sauce and let them cook in it all day too. YUM!

i cooked a package of sausage up first with onions and a few bell peppers before i added all the tomato stuff.
If you like sauce with sausage try this easy recipe next time....
1 package hot italian sausages (5 or 6 taken out of case)
1 1/2 lb ground beef
3 cloves garlic, minced
1/2 t salt
2 large cans tomato sauce
1 large can diced tomato
1 sm can tomato paste
1 t soy sauce (weird I know)
oregano and basil and pepper
Sometimes I add onions, pepper and mushrooms, sometimes I omit. People always love this sauce.
this is pretty close to what i had, except i used ground sausage and a can of crushed tomatoes, too. and i would never think to use soy sauce. may add that next time.

I just made some last night with some equally awesome turkey meatballs, DH and I love the stuff and it's sooooo easy!
1/2 chopped onion into a pot with a few tablespoons of olive oil.(med to med-high heat)
4-6 cloves of garlic(minced) added to that after the onions start to sweat
salt, pepper and whatever seasonings you see fit, I use about 1 teaspoon each of dried oregano, thyme, basil and chili flakes.
1 big can of crushed tomatoes(very important b/c diced tomatoes lead to a runnier sauce) added to the pot...bring to a boil, cover and drop down to a simmer for half an hour or more. Season with s & p if still needed.
You can drop meatballs, porkchops, sausage or a pound of browned ground meat in (all must be cooked) if you want and then cook that for another ten minutes.
I'm having leftovers today for lunch.
