I need a good "apple" recipe (not pie)

Any suggestions? I have a bag of apples and want to make something yummy- preferably not covered in sugar. DD has milk, egg, nut allergies, although I CAN use soy milk/soy butter and buy pastries that contain no egg/milk... Any recipe ideas for what to make with apples? (Other than apple sauce or pie...)

  • Apple dumplings are always a hit. I try to make them for Thanksgiving or Christmas every year. (Might have more sugar than you are interested in, though)

    Ingredients

    1 1/4 cups sugar
    image 1 cup water
    image 2 tablespoons butter
    image 1 tablespoon cinnamon
    image 2 cups all-purpose flour
    image 2 teaspoons baking powder
    image 1/2 teaspoon salt
    image 2/3 cup vegetable shortening
    image 1/2 cup milk
    image 4 medium tart apples (such as Granny Smith), peeled, cored

    Prep Time: 30 minutes
    Baking Time: 35-40 minutes
    Makes 4 dumplings

    Directions
    1. Preheat oven to 375F. Grease a 2-quart shallow baking dish. Combine 1 cup sugar, water and butter in a small saucepan. Bring to a boil over medium-high heat; boil 1 minute. Remove syrup from heat: set aside. Mix remaining sugar and cinnamon in a small bowl; set aside.

    2. Combine flour, baking powder and salt in a medium bowl; mix well. Cut in shortening with a pastry blender until coarse crumbs form. Add milk; stir until a soft dough forms.

    3. Roll dough on a lightly floured surface to a 16-inch square. Cut dough into 4 squares. Place one apple in center of each dough square. Sprinkle apples with sugar-cinnamon mixture. Moisten edges of squares. Bring corners of dough squares up to tops of apples; press edges to seal. Place in prepared dish.

    4. Pour reserved syrup over dumplings. Bake, basting with syrup once, until apples are tender when pierced with tip of a knife, 35-40 minutes. Serve warm with syrup.

    Village Tips
    *Each dumpling can serve 1 to 2 people--depending on how hearty the appetites are!

    *To prevent the peeled apples from browning, sprinkle them with some lemon juice.

  • Apple Crisp is a big hit here...I am sure you could adjust a recipe to fit your DDs needs...well, except for the brown sugar- which is necessary IMO. ;)

  • Apple crumble

    chop them up and mix in a small amount of cinnamon and sugar and let her eat them like that or you can heat that in the mircowave and give that to her warm

    Add it to oatmeal or make pancakes by grating it

    Muffins, bread but you'd have to search for non dairy recipes
