NTR: What are your go to meals?

I am finally getting around to meal planning for each week and need some stuff to add to my list.  What are you easy go to meals?

  • Stir-fry meals are my go-to because they are SO easy, you can virtually throw anything you have in there, and it can taste a little different every time! :)

  • I always have stuff for spaghetti and meatballs and garlic bread.
  • I always have a couple of ready-made frozen things set to go.  Chicken nuggets, frozen pizzas, etc. 

    I also always have chicken breast in the fridge because it is DS's favorite thing and DH and I can make salads with it, quesadillas, etc. 

    I always have ground turkey on hand also for sloppy Joes, tacos, etc.  

     

  • This is going to make me sound so lazy, but when I dont feel like cooking I just do shake and bake chicken parm (regular shake and bake chicken with the parm seasoning, then 5 mins before its done put marinara and mozz on top) and a box of rice a roni.  I throw some steamed brocolli in the rice.  DD loves it, its healthy enough and easypeasy.
  • I think soups and stews seem intimidating, but they are so easy!  We have some type of chicken soup every week.  I boil and entire chicken, which creates its own stock (just add salt while its boiling.  After an hour or so I pull the chicken out and let it cool off, I cut up a bunch of veggies and throw it into the strained stock, pull the meat of the chicken and throw it back in, then add noodles, rice, gnocchi, or I made dumplings and throw in.  It always last 2 dinners, its good, and its pretty healthy.

    We also do spaghetti regularly.  Sometimes I mix it up by making meatballs rather than meat sauce.

    Pork chops on nights I don't have a lot of time.  Add some mac and cheese and green beans on the side - meal is done!

    I always have a pork roast in the freezer.  I just sprinkle salt/pepper/ garlic powder on both sides and put it in the oven.  First 45 minutes or so I cover it, then I pull the cover off until it is done cooking so it has some color.  Actually, I buy the giant pork roast from Sams or Kroger and I cut it into a couple pork roasts and several bags of pork chops.  The last one I bought was $14 and I made 3 pork roasts and 3 bags of pork chops out of it!  GREAT way to save money!

    Those are my "go-to" meals that we have the most.

     

  • We don't eat out much, so I have a ton. I almost always do a homemade pizza night. Some others are tacos, taco salads, fajitas, enchiladas, black bean and chicken quesadillas, ravioli lasagna, tortellini marinara, mostaccioli alfredo with broccoli, sloppy joes, chicken parmagiana, honey mustard pork chops, smoked sauage, soup and grilled sandwiches, breakfast for dinner.

  • Tacos are an easy one that I make pretty much weekly. Another one is this super simple shrimp recipe:

    Peel and de-vain a pound of shrimp (I get the medium ones)

    Melt a stick of butter (yes a whole stick) over medium heat in a pan. Once it's melted, stir in a 1/4 cup of fresh squeezed lime juice, 1 tablespoon of Worcestershire, a teaspoon of hot sauce and 1/2 teaspoon of thyme. Season with salt and pepper and toss in the shrimp. Cook shrimp for two minutes on each side.?

    In the meantime, take a baguette and split it down the middle. Brush with olive oil and throw under the broiler until golden brown. I just dump all of the shrimp and "sauce" in a big bowl and we got to it. The bread dipped in the "sauce" is?ridiculously?good. It's quick, yummy and doesn't take a ton of ingredients!

  • I like recipes from kraftfoods.com.  Just did one last night, buffalo chicken wraps.

    Bake frozen chicken strips. Put on a wrap, add lettuce, diced tomatoes, cheese and mayo mixed with a little bit of hot sauce. DH and I love them and then I can feed DD a plain chicken strip and some of the tomatoes.

  • I try to keep the following on hand at all times.

    macNcheese boxed

    frozen veggies. brocolli, mixed veggie, corn, peas

    pasta

    tomato sauce jar or homemade

    frozen chicken breasts

    shredded cheese cheddar/mozz

    cans of cheddar soup, cream of chicken, cream of celery, broccoli chedder

    taco seasoning packet

     

    In a pinch I can make:

    macNcheese with mixed veggies & sautee cut up chicken in some EVOO. Mix together & serve. 

    frozen chicken in the crock w/ soup cans. mix in veggies the last hour to heat through. 

    pasta & sauce w/ bread. pick up a premade salad mix & loaf of italian bread on my way home from work or at lunch time. Sprinkle some garlic powder & shredded mozz on bread & heat up in toaster oven for cheesy garlic bread.

     sautee chicken cut up & make with taco seasoning. Add frozen corn. Serve over rice, brown/white & throw some shredded cheddar over the top. Sour cream if you have it & like it. I also add beans if I have them on hand. Black or red are good.

  • Every couple of weeks I buy a rotisserie chicken.  The first night I serve it with easy to make sides like a baked sweet potato and steamed veggies.  Then I take all the remaining meat and make curry pockets (chopped meat, shredded carrots, celery, ricotta cheese, and seasoning wrapped in whole wheat pizza dough and baked) and boil the rest to make soup.  I love those weeks- I get 3 dinners, plus leftovers for several days of lunches!

  • Pasta - red sauce with whatever veggies are in the fridge.  Chicken is another good one because it can be baked or done on the stove.  And, I hate to say it - frozen pizza or Bertolli meals are good for a quick dinner.  We don't do them every night, but if only all dinners could be that easy!
  • I try to always keep the ingrediants for these in the house:

    spaghetti

    king ranch caserole

    stir-fry (chicken or beef)

    and lately ... chicken and dumplings  :)  I also ALWAYS keep a frozen pizza handy ... for those REALLY lazy nights!

  • Spaghetti with either meatballs or meat sauce.

    I always have a few different marinades on hand, so if I know I'll be in a hurry that day I just defrost chicken or pork chops, pick one of the marinades and throw them in the crockpot.
