I don't know if you're into vampire fiction at all, but the Sookie Stackhouse books are quick, easy reads. I wasn't really into the first one, but it helped pull me out of a reading funk.
Garden Spells by Sarah Addison Allen. It's not total fluff or just for fun as there is a little bit of heavier stuff underlying, but it's a quick, easy read and it's just very sweet. i don't know how else to describe it.

"Something Borrowed" and "Something Blue" by Emily Giffin are great fluff.
My favorite "fluffy" book is "Girls Poker Night" by Jill Davis. Its funny and clever, but a great light read.
