Don't get me wrong, I have used boxed cake before. I would really like to make this homemade.
Yes ladies, please pass on the recipes later tonight. I figured sour cream would be an ingredient in a cake because it makes them moist. Maybe i will check out foodnetwork.com also.

Here's the one I made all the time (plus the frosting in separate recipe below). DH loves it.
Carrot Cake
Ingredients





- 2 cups shredded carrots
- 1 (15 ounce) can crushed pineapple, drained
- 1/2 cup vegetable oil
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/8 teaspoon salt
- 3/4 cups walnuts
Preheat oven to 375 degrees.
Sift together flour, baking soda and salt. set aside.
In a large bowl, combine carrots, pineapple, oil and sugar.
Add eggs, cinnamon and nutmeg. Add flour mixture and mix well. Stir in walnuts.
Pour into prepared greased and floured pans (I used two round 8" cake pans). Bake for about 25-30 minutes, or until a toothpick inserted into the cake comes out clean.
Allow to cool completely, then frost with whipped cream cheese frosting.
Whipped Cream Cheese Frosting
Ingredients



- 1 package cream cheese (8 oz.)
- 3/4 cup sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
In a small bowl, beat the whipping cream until soft peaks form. Set aside.
Note: Most recipes I have found say to beat until stiff peaks form; but I find that working with cream that is already stiff at this point results in over-whipped cream, since you will still be folding it and mixing it in the next step. So I like to end this step with soft peaks.
In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until smooth.
Fold the whipped cream into the cream cheese mixture, and gently combine all ingredients.
Below are two examples of goodies that I made that I frosted with this frosting. The first is a carrot cake, and the second shows the frosting tinted purple (for a child's birthday party).
