We got the $40 foam mattress from Ikea. I decided I wanted a foam mattress and read reviews of a bunch of options and decided that the one from Ikea sounded reasonable to me - it had a good density rating, reasonable thickness, and was the correct size of our crib.
We went with the foam mattress recommended by Baby Bargains -- the Colgate Classica III. It's high-density foam, fits our crib perfectly, and was reasonably priced.

I got the Classica I based on Baby Bargains, it is a spring mattress. It was inexpensive, plus I got a discount because I bought it when I bought my crib.
Whatever kind you get, it should be a firm mattress when you squeeze it from both sides, it should not give much.

Consumer Reports recommends that if you get an innerspring mattress, it should have at least 135-150 coils AND the gauge of the coils should be 15.5 or less (the lower the number, the thicker the coils). You can't just look at the number of coils.
They also have guidelines for foam mattresses - you should check it out.
