Sure. If you don't mind them mushy, put them in when you start cooking the ham. If you'd like them to be firmer, though, then you might want to put them in later.
Hams (in my experience) tend to be a bit greasier and lose alot of juice. If I were going to do veggies in with the ham I would throw them in with a few hours left rather than the whole time.
Just a thought, love to know how it turns out. I need to use my crock pot more!
A) Ham's take a while so you do not want to put your veggies in at first. You need to put them in towards the end. Put the carrots in before the potatoes as they will hold their shape and color better than a potato.
Ham can be very greasy and your veggies will be a little denatured if you over cook them in the ham grease. The ham will strongly flavor them as well so just be careful.
Good Luck and let us know how it turns out!

You should totally save any fat/bones etc and the next day throw it in a pot of green beans and corn to flavor them and serve up with leftover ham and buttermilk biscuits. YUM.

Well, I kind of think they go well with anything, either way they only take an 30 mins at 400 degrees and you can season them with any herb or flavoring.

aaand I stand corrected - wouldn't the veg be mushy if you dump them in all at the same time?

Roasted veggies go really well with almost anything, IMO anyway!
They only take 30-40 min at 400 degrees and you can use almost any herb or flavoring you want.
